| MEMBERSHIP
Membership in the ACS is constantly growing, with memberships available at the Associate, Individual, Small Business, Corporate Sponsor and Multi-Unit Retail levels. ACS members identify themselves according to the following professional demographic:
· 28% cheesemakers/buttermakers
· 14% distributors/brokers
· 21% retailers
· 5% academic/technical affiliates
· 4% writers/authors or communications specialists
· 3% restaurant/foodservice specialists, such as chefs
· 4% suppliers/dairies
· 10% enthusiasts, who are mainly consumers or cheese-lovers
Through the work of its standing committees, the American Cheese Society represents the interests of its members by working with organizations that seek to protect the production and heritage of American cheeses.
· With Oldways Preservation and Exchange Trust, the American Cheese Society co-founded the Cheese of Choice Coalition, which seeks to preserve the production and sale of raw milk cheeses within the United States, as well as the importation of raw milk cheeses from around the world.
· With Slow Food, USA, the American Cheese Society co-founded the Farmstead Cheese Consortium, which seeks to preserve the heritage and production of cheeses by cheesemakers who raise and milk their own herds or flocks, and produce their cheeses on the farm where the animals live. At present, 53 of the American Cheese Society’s 200 cheesemaker members are classified as “farmstead” cheesemakers.
Membership in the American Cheese Society is available to anyone involved in the trade or simply passionate about American-made specialty and artisanal cheeses.
