Food Science and Technology is a multi-disciplinary field that applies fundamental scientific principles to the research, development, manufacture, packaging, storage, and marketing of food products. It is a discipline in which biology, chemistry, engineering, microbiology, biochemistry, toxicology, management, and other basic and applied sciences are used to study the nature of foods, the causes of their deterioration, and the principles underlying food processing.
Programs include:
Animal Sciences -Food animal research in: genetics, immunology, meat science, nutrition, physiology, reproduction, microbiology, mammary biology, and decision support systems; food animal and horse extension; food animal, horse and companion animal instruction.
Food Animal Health Research Program-Animal colonization, transmission and pathogenesis of cryptosporidium, enteric viruses and human food-borne bacteria; antimicrobial resistance; animal studies of human enteric viruses and immunity; genetically engineered vaccines; host immunity and cytokines; immunosuppression; molecular epidemiology; molecular microbiology; mucosal immunity; poultry diseases, infectious bursal disease virus; pre-harvest food safety; pro-biotics; pre-biotics; prion-mediated disease.
