Nutritional Sciences is one of three departments and one school in the College of Human Environmental Sciences. NSCI has 16 full time faculty and approximately 320 undergraduate majors and 60 graduate students. NSCI's instructional programs include: dietetics, human nutrition/premedical sciences, and foods and nutrition, a graduate-level dietetic internship program, and 60 M.S. and Ph.D. students conducting research in various specialized areas.

The Interdisciplinary Food Science Graduate Programs at Oklahoma State University offers students the opportunity to earn both MS and PhD degrees in Food Science. Within this program, several areas of specialization are available from which to choose.
