The Department of Food Science and Technology offers undergraduates two options, each leading to a Bachelor of Science Degree in Food Science and Technology and both approved by the Institute of Food Technologists. The two options are "The Food Science Option" and "The Fermentation Science Option". Both options require that a student take courses in the "core curriculum" which contains courses in food science and technology, chemistry and biochemistry, math and physics, and biological sciences. In addition, each option requires a group of courses specific to that option.
Food Science and Technology is the application of science and engineering principles to the design, analysis, processing, packaging, production, preparation, evaluation and storage of foods, food ingredients, and beverages.
Fermentation Science is the study of the fundamental and applied sciences related to the use of microorganisms as production and processing agents. Courses specific to the degree address the biological, chemical and physical principles of fermentation as well as the engineering, processing, preservation, quality evaluation, public health aspects and use of beer, wine, and fermented food products.
Faculty advisers provide one-on-one guidance, undergraduate research projects, and assistance in career decisions, summer job selection, scholarship opportunities, and job selection among the many placement opportunities in the food industry.
