Job Description
PRINCIPAL ROLES and RESPONSIBILITIES
- Implement company standards for formulas, scaling weights, pan sizes, bag sizes, bake times, and all production control processes for bread, cake and roll products
- Train, oversee and critique Production staff and overall bakery performance
- Supervise entire Production operation under the direction of the Production Manager
- Direct resources of plant and equipment toward the most efficient production of baked goods
- Coordinate with Quality Department to ensure compliance with uniform product standards
- Coordinate with Sanitation to ensure plants and equipment meet regulatory requirements for cleanliness and product safety
- Promote safety through work procedures, and employee safety programs
- Ensure that consistent quality product is provided to Sales on a timely basis
- Ensure that all union contractual obligations are fulfilled
- Coordinate and implement company policies and procedures in all areas
Requirements
Education and/or on-the-job experience needed - High school with at least three years management experience. College degree preferred, but not required
- Completion of AIB Science of Baking correspondence course or willingness to complete in a timely manner
- Completion of American Institute of Baking Residence Baking Course preferred
Industry-specific knowledge, skills & abilities needed
- Bakery Industry
- Thorough understanding of commercial high speed bakeries and production equipment along with the affiliated departments such as Sales and Marketing, Purchasing, Shipping, and Transportation
- Understands the functionality of ingredients with time and temperature in the baking process
General Business
Operational Efficiency - Plans and coordinates use of manpower, ingredients and equipment to ensure efficient production of consistent quality products
Specialty / Job-Related knowledge, skills & abilities needed Engineering - Understands the unique equipment in a bakery production plant, along with operation of that equipment relative to the baking process.
Ability to trouble shoot equipment to ensure optimum product quality is achieved
Leadership experience needed - Team Dynamics – Empowerment, Collaboration, Motivation, and Enthusiasm - effectively leads, coaches, trains, and motivates people to follow established standards
- Human Performance Management – effectively monitor performance of direct reports and provide feedback to improve performance

Technical Skills
- Personal Computer Skills - Literate with MS Excel and Word
IBC-specific knowledge/experience needed
- Understands IBC Sales ordering, scheduling for efficiency, ingredient and product flow, and distribution
- Familiar with IBC bread, roll and cake products and equipment
Selected candidates will be required to pass a drug test, physical and an extensive background check.
