Minn-Dak Yeast Company was formed in 1989 by the Minn-Dak Farmers Cooperative (MDFC), a diversified agricultural organization based in Wahpeton, North Dakota. The stockholders of MDFC produce sugar beets on farms in an eight-county area in Minnesota, North Dakota and South Dakota. The yeast plant was the third diversification project for MDFC's stockholders, the other two being a sugar processing mill and Delta Fiber Foods that makes dietary fiber from sugar beets.

The yeast plant started production of the Dakota Bakers Yeast brand on August 17, 1990, and marketed it as such for four years. In 1994, Minn-Dak Yeast Company entered into a strategic partnership with Universal Foods Corporation (now Sensient Technologies Corporation) in Milwaukee, Wisconsin. As a part of this agreement, Sensient sold Minn-Dak's compressed yeast under its Red Star Yeast brand.

In February 2001, Sensient divested its Red Star Yeast division but retained its partnership with the Minn-Dak Yeast Company. A new Minn-Dak Yeast Sales and Service division was formed in Indianapoilis, Indiana to handle all sales, research, technical-support, and service for the yeast company. While the yeast plant produced only crumbled-compressed yeast until October 2001, now it has the capability of supplying cream yeast as well. Minn-Dak also changed the brand name for its yeast products to its original name
